Tomato Vegetable Barley Soup Recipe:

My all time favourite thing to eat during the winter months is homemade soup. Not only are they filling but they are fairly simple to make and you always have days worth of soup. This is my mom’s recipe for her homemade tomato vegetable barley soup. Enjoy 🙂

INGREDIENTS:
6 cups water
6 tsp chicken stock
28oz fresh crushed tomatoes 

1 can tomato soup 
2 cups shredded carrots 
2 cups shredded potatoes
1 1/2 cup chopped onions
1 cup chopped celery 
1/2 cup pearl barley 
1- 1 1/2 cups noodles of choice (or quinoa)
6 cups water
1 tbsp parsley flakes
1 tsp granulated sugar
1 tsp salt 
1/2 tsp pepper 
1/2 tsp thyme 

INSTRUCTIONS:
1. Heat first amount of water and chicken broth in large pot. Stir to dissolve.
2. Add remaining ingredients. Bring to a boil and cover for 1.5 hours
