FBD SPICY QUINOA WITH BLACK BEANS

Here is a delicious quinoa recipe that is super easy to make and goes great with many different dishes. Feel free to add pieces of chicken or some ground turkey to make it a full meal in itself.  This recipe makes enough that you will most likely have left overs for a couple days :).

Ingredients:
1 tbsp coconut oil 
3 cloves garlic, finely chopped
Half small onion, chopped 
2 cups quinoa, rinsed if needed
4 cups water 
3 tsp chicken broth or vegetable broth
3 celery stalks, chopped 
1 of each red and yellow pepper, chopped
3 tsp cumin 
2.5 tsp cayenne pepper 
Salt and pepper to taste 
19 oz can black beans, rinsed 

Directions: 
1. Heat coconut oil in skillet. Add chopped garlic and onions and saute until onions are lightly brown.
2. Add quinoa and toast, approximately 3 minutes. 
3. Slowly add 4 cups of water with added chicken broth to pan, let simmer for 2 minutes. 
4. Add chopped vegetables, black beans, cumin, cayenne pepper, salt and pepper. Let simmer until broth/water is absorbed and quinoa is tender.
