My ALL time favourite dinner! Love these. And the best part about these, is you can make extra and they are the perfect portion size snack for a few days.
MEATLOAF MUFFINS
1lbs ground meat (turkey, chicken, or beef)
1 egg slightly beaten
1 tbsp chopped parsley
2 tbsp chopped onions
1 stalk celery chopped
2/3 cup dry bread crumbs or oatmeal
2/3 cup milk (add slowly as you may not need all of it)
1 tsp salt
1/4 tsp pepper
OPTIONAL: dash of chipotle chilli pepper
– Place all ingredients in mixing bowl & mix well.
– Grease a muffin tin (approximate 9) with pam.
– Bake at 350 degrees for 45 minutes- 60 minutes. Check at 45 minutes (most times it is ready by then)
