Meatball Stir Fry

BBQ MEATBALLS:
1lb ground turkey
1/2c kellogg’s crumbs
2tbsp skim milk
1tbsp teriyaki sauce (watch sodium amount on nutritional label)
1tsp chili powder
1/2tsp pepper
1/4tsp garlic salt
1/4tsp white pepper
Vegetables of your choice (onion, mushroom, broccoli, red peppers, etc)

Instructions: Place ingredients in a large bowl and mix all ingredients together, except the vegetables. Roll into small meatballs. Place on wax paper till all meatballs have been rolled and add to heated skillet with the lid on to cook the turkey meat balls faster. Once meat balls are done, stir fry vegetables.

Sauce:
1c ketchup
1c brown sugar
1tbsp teriyaki sauce
1tsp prepared mustard
1tsp vinegar
1/2tsp pepper
1/4tsp garlic salt
Splash of ‘liquid smoke’

Instructions: Place sauce ingredients in a large saucepan. Cook over medium high heat until brown sugar has dissolved and sauce begins to boil. Remove from heat. Add cook meatballs to sauce pan. Return to heat. Allow meatballs to simmer in sauce for 20 minutes. Serve with stir-fried vegetables and rice.

Rice:
Prepare any type of rice you usually eat.

Alternative healthy choices:
– Instead of using white rice use brown rice.
– Instead of using brown sugar trying using honey- 3/4c of honey replaces a cup of sugar
