Thanks to Tess Aboughoushe for this delicious chocolate chip cookie with flaxseed recipe. She made us some of these cookies and we just HAD to share this recipe. Enjoy 🙂
CHOCOLATE CHIP FLAXSEED COOKIES:
1 cup Agave Nectar
1 cup Coconut Oil
1 tbsp vanilla
2 tbsp chia seeds soaked in 1/3 cup of water for 10 minutes (replaces eggs)
2 cups whole wheat flour
1/2 cup wheat germ (or add another 1/2 cup of flour)
1/2 cup ground flax seeds
3/4 tsp baking soda
3/4 tsp salt
1 cups chocolate chips (I used white and dark chocolate chips)
1 cup chopped walnuts or pecans
DIRECTIONS:
1. Preheat oven to 350 degrees
2. Cream together agave syrup and coconut oil (I melted the coconut oil)
3. Add vanilla and chia, mix well
4. Combine dry ingredients together and gradually add into creamed mixture
5. Stir in chips and nuts
6. Roll into 1 1/4″ balls and place on non stick cookie sheets about 2″ apart
7. Bake for 10 to 12 minutes
