Hey everyone,
A client of ours had made a batch of these and gave us some to try and needless to say Chad and I were both hooked! She got the recipe from www.texanerin.com. If you are looking for a healthier chocolate chip cookie then give this one a try for sure!
INGREDIENTS:
1 1/4 cups canned chickpeas, rinsed and dried
2 tsp vanilla extract
1/2 cup + 2 tbsp natural peanut butter (or almond butter)
1/4 cup honey (or any other liquid sweetener you prefer ie. Agave)
1 tsp baking powder
Pinch of salt (ONLY if the natural peanut butter doesn’t have added salt in it)
1/2 cup chocolate chip cookies
DIRECTIONS:
1. Preheat oven to 350.
2. Combine all ingredients, EXCEPT chocolate chips, in a food processor until very smooth. Scrape the side to get all the little chunks of chickpeas and process once more until everything is combined.
3. Add chocolate chip and either stir it in OR pulse it twice until chocolate chips are mixed into batter
4. Wet hands a little bit and roll into 1 1/2 ” balls. Place on greased baking sheet. If you want more of a flat cookie press them down with a fork, if not leave them as balls and bake for about 10-12 minutes.
