One word… DELICIOUS!
BLACK BEAN CHOCOLATE CHIP COOKIES
You will need…
15 oz can black beans
2 tbsp olive oil
2 tbsp all natural peanut butter
2 tbsp skim milk or almond milk
1/2 cup of honey
5 tbsp cocoa powder (for added protein you can also add chocolate protein powder)
3 tbsp whole wheat flour
1 tsp of cinnamon (think next time I will add more mmm..)
1 tsp baking powder
3/4 tsp of kosher salt (again, only added about 1/4)
Handful of chocolate chips (optional)
Time to bake..
1. Preheat oven to 375 F
2. Rinse & drain black beans. Add black beans, olive oil, peanut butter, milk and honey to a blender and blend until smooth.
3. Add cocoa powder, flour, cinnamon, baking powder, salt & handful of chocolate chips (optional) to the bean mixture and blend until smooth. The batter will resemble a thick mousse.
4. Line a baking sheet with parchment paper and spoon batter on it. Makes about 16 cookies.
5. Bake for about 10 minutes. The cookies should still be soft when you remove them from the oven.
I added 3 chocolate chips on top for decor but thats not needed 🙂
