Almond Chicken

Hello,

So tonight I decided to try this Almond Chicken recipe from the cook book called Delicious Detox by Carol Morley (Naturopathic Doctor). It was really tasty! However, you need to like the taste of strong herbs as this chicken has a very powerful little ‘kick’ to it. Try it out and let us know what you think :).
P.s. I highly recommend purchasing the book as there are tons of really delicious recipes.

ALMOND CHICKEN:

1/2 cup: Ground Almonds
1 tbsp: Dried Oregano
1 tbsp: Dried Basil
1 tbsp: Dried Parsley
1/2 tsp: sea salt
1 tsp: freshly ground pepper
2 tbsp: olive oil
2 boneless chicken breast (skinless)

1. Preheat oven 450 ℉
2. Combine almonds, oregano, basil, parsley, salt, and pepper in a small bowl.
3. Rinse chicken and pat dry
4. Pat chicken on each side with almond mixture and place on baking sheet or shallow glass baking dish.
5. Drizzle olive oil over chicken and bake in oven for 12-15 minutes.

  2. We just tried the Almond Chicken…Yummy! You are right it does have a kick to it:) I would suggest if you do not like the taste of strong herbs than cut the Oregano and Basil back to 1/2 tbsp and pepper to 1/2 tsp. You won’t get the full aroma, but it will still taste great!. Try it with rice/veggies and a light salad with lemon juice and oil. Enjoy!
