Leftover Turkey- Chicken Noodle Soup

Well thanksgiving has just passed and you probably have lots of turkey (or chicken) leftover, so this recipe is great to use up that delicious turkey you made.


Leftover Turkey- Chicken Noodle Soup

1 medium onion, chopped
> 4 cloves of garlic, chopped
> 3 tbsp olive oil
> 2 cups carrots, chopped
> 1 1/2 cups celery, chopped
> 4 cups leftover turkey (or chicken), chopped into small chunks
> 12 cups chicken stock (broth)
> 2 cups of noodles OR 1 cup quinoa
> 1/2 tsp marjoram
> 1 tsp pepper (or more..I love pepper)
> 1 tbsp parsley
> 1 pinch dill
> 1/2 tsp thyme

1. Heat olive oil to a 4 quartz soup pot, add garlic and onion to pot and saute until tender.
2. Add carrots, celery, chicken, chicken broth and noodles (or quinoa) to pot. Let simmer for 20-30 minutes.
3. Add spices and simmer for 1 hour or until noodles and vegetables are soft.
