Banana Bran Muffins

> 1 1/2 cup wheat bran (or oat bran)
> 1/2 cup milk
> 2 medium mashed bananas
> 1 1/2 tsp vanilla extract
> 1 cup whole wheat flour
> 1 1/2 tsp baking powder
> 1/2 tsp baking soda
> 1 tsp ground cinnamon
> 1/4 tsp salt
> 1 tbsp unsalted melted butter or melted coconut oil
> 1/4 cup honey
> 1/4 cup dark molasses
> 3 tbsp of chocolate chips

  1. Preheat oven to 350 degrees. Add paper baking muffin cups to 10 muffin tins. (Picture shows 12 muffins but I doubled the recipe, originally recipe only makes 10)
  2. In a medium bowl mix together wheat bran, milk, mashed bananas and vanilla extract. Let sit for 10 minutes.
  3. In a small bowl mix together flour, baking powder, baking soda, cinnamon and salt. Set aside.
  4. In a large bowl mix well melted butter, honey and molasses.
  5. Once banana mixture has been sitting for 10 minutes, add this mixture to butter mixture. Mix thoroughly, then fold in flour.
  6. Add chocolate chips to the mixture at the end. Fill the muffin tins and cook for 19-21 minutes or until tops of muffins are firm and slightly brown.Enjoy! 🙂
