BANANA BRAN MUFFINS
> 1 1/2 cup wheat bran (or oat bran)
> 1/2 cup milk
> 2 medium mashed bananas
> 1 1/2 tsp vanilla extract
> 1 cup whole wheat flour
> 1 1/2 tsp baking powder
> 1/2 tsp baking soda
> 1 tsp ground cinnamon
> 1/4 tsp salt
> 1 tbsp unsalted melted butter or melted coconut oil
> 1/4 cup honey
> 1/4 cup dark molasses
> 3 tbsp of chocolate chips
- Preheat oven to 350 degrees. Add paper baking muffin cups to 10 muffin tins. (Picture shows 12 muffins but I doubled the recipe, originally recipe only makes 10)
- In a medium bowl mix together wheat bran, milk, mashed bananas and vanilla extract. Let sit for 10 minutes.
- In a small bowl mix together flour, baking powder, baking soda, cinnamon and salt. Set aside.
- In a large bowl mix well melted butter, honey and molasses.
- Once banana mixture has been sitting for 10 minutes, add this mixture to butter mixture. Mix thoroughly, then fold in flour.
- Add chocolate chips to the mixture at the end. Fill the muffin tins and cook for 19-21 minutes or until tops of muffins are firm and slightly brown.Enjoy! 🙂
